When Life hands you...



I bet you thought I would say lemons... right... right...


Sometimes you find yourself with several ripe avocado and you just really aren't in the mood for guac. What are you going to do? Make an avocado smoothy (even I'm turning my nose up)? Toss them? Watch them mildew? WAIT! YOU HAVE OPTIONS!


You can stuff them with seafood and have a hearty supper. Or lunch for that matter. You can make muffins or frosting. Oh yes, you can! Soup anyone? How about a gazpacho type treat on a warm, humid summer night.


You could swerve a little off the primal path and make some BACON wrapped Guacamole Poppers with a little cream cheese and some jalapeno.


Better yet, make Grilled Avocado Bacon Skewers. Avocado AND bacon; I know, right!

What you need:

  • 2 ripe avocado, rather large ones
  • 4 roma tomatoes
  • 16 strips of bacon
  • 16 pieces of thick, deli sliced turkey
  • a pinch of salt and pepper
  • 16 skewers

What to do:

If you are using wooden skewers, you will need to soak them in water for about 20 minutes.

Heat up the grill to a medium heat.

Half, pit and skin the avocado. Cut each half into fourths.... you know have 16 pieces. Now cut each of your four tomatoes into fourths... 16! (and you thought math was hard)

Now, take a piece of bacon and lay it out flat. Roll a piece of turkey up to roughly fit on the bacon. Top that with a slice of avocado and slice of tomato. Wrap the bacon around the leaning tower of goodness and skewer it. Repeat 15 more times.

Sprinkle them with salt and pepper and grill until the bacon is fully cooked. You're welcome!
